Resolution: To change the theme of Outlook (Classic), follow the steps below.
When in the Outlook (Classic) app, Navigate to the top left and click "File", then Navigate to the "Options" Icon at the bottom left side of the screen.
Finally towards the middle of the screen, change the "office theme" to whatever you would like.
